Gentle Folk, Schist, Sauvignon Blanc

Tasting Notes

This is a ripe style of Sauvignon Blanc, more stonefruit spectrum than green and grassy, but super steely and mineral too. Incredibly clean and pure. Half was kept as whole bunches, the rest was destemmed, then combined and left on skins for four days before being drained and pressed then fermented in 5 year old 500 litre wooden barrels with ambient yeast. The wine ages in barrel for about 11 months, before it is bottled, unfined and unfiltered.
